Coconut Pistachio Bars

  • 4 cups shredded coconut
  • 1/3 cup raw pistachios
  • 1/2 tsp salt
  • 1/4 cup rose water
  • 1/4 cup orange blossom water
  • 2 tbsp honey or maple syrup
  • 1 tbsp coconut oil melted
  • 150 g chocolate of choice


  1. Place all ingredients in a food processor. Process until everything is combined and you have a sticky consistency. Add 2 tbsp water if needed to reach this consistency.

  2. Press well in a 20*20 cm square pan lined with parchment paper or aluminium foil. Refrigerate for at least 1 hour.

  3. When solid, cut into bars. 

  4. Melt your chocolate in the microwave or using a bain marie. Dip each square in chocolate and decorate with some pistachios!
