Eggless Red Velvet Cupcakes with Greek Yogurt Frosting

Ingredients

Red Velvet Cupcakes

  • 1 1/3 cup all-purpose flour
  • 4 tsp cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sugar or dry sweetener of choice
  • 1 cup milk of choice
  • 1/2 cup vegetable oil
  • 1 tsp vanilla
  • 1 1/2 tsp white vinegar
  • 2 tsp red food coloring liquid

Greek Yogurt Frosting

  • 2 cups Greek yogurt
  • 1 tsp vanilla
  • 1 tbsp honey or maple syrup

Instructions

Red Velvet Cupcakes

  1. Preheat oven to 180°C.
  2. Combine the milk with 1 tbsp white vinegar and set aside for 5 mins to curdle.
  3. Sift together the flour, cocoa powder, baking powder, baking soda and salt. Mix well.
  4. Add the sugar and combine.
  5. Now the milk is ready, mix it with the oil, vanilla and red food coloring.
  6. Add all wet ingredients to the dry ones and mix until a smooth batter forms.
  7. Line your cupcake tin with cupcake liners and divide the batter between 12-14 cupcakes.
  8. Bake for 15 to 20 mins or until a toothpick inserted in the middle of a cupcake comes out clean.

Greek Yogurt Frosting

  1. Combine all ingredients together and put the cream in a piping bag. Let cool completely before you remove the paper liners. Add the frosting and enjoy!
