Hello guys! Ramadan is coming to an end and I decided to end it with a yummy recipe perfect for Eid! The Date Caramel Cake!

This a healthier version of the typical Date cake with a healthy date caramel sauce! It tastes so good and without all the added sugar!


This is my go-to recipe when it comes to healthy cakes and caramel sauce. And it’s a family favorite! Try it and let me know what you think!

Date Caramel Cake
Ingredients
Date Cake
- 1 cup dates or date paste
- 3/4 cup hot water
- 1 tsp baking soda
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 4 eggs
- 3/4 cup sugar or dry sweetener of choice
- 2 tsp pomegranate molasses optional
- 1/2 cup vegetable oil
- 1/4 cup chopped walnuts
Healthy Date Caramel Sauce
- 1/2 cup dates or date paste
- 2 tbsp honey or maple syrup
- 1/2 cup milk of choice
- 1/4 tsp vanilla
- Pinch of salt
Instructions

First, make the date paste by blending 1 cup dates with 3/4 cup hot water and 1 tsp baking soda in a blender until smooth. Set aside.

Preheat your oven to 170°C and line a 20cm pan with parchment paper.

In a bowl, mix the flour with baking powder and salt. Set aside.

With your hand or electric mixer, beat the eggs with the sugar and pomegranate molasses until light and fluffy (about 2 mins on high speed).

Add the date paste and the vegetable oil. Beat again until incorporated.

Start adding the dry ingredients and mix until you have a smooth batter. Pour in prepared pan and bake in preheated oven for 45-50 mins or until a toothpick inserted in the middle of the cake comes out clean.

Remove from oven and let cool before adding the date caramel sauce.
Healthy Date Caramel Sauce

Blend all the sauce ingredients in a blender until smooth. You can adjust the consistency by adding more milk until you reach your desired consistency.
