Hey guys and Ramadan Karim! Last year I made a lot of healthy Arabic sweets for Ramadan and don’t worry I will still be making those! But today for my first Ramadan recipe with a twist I chose these Coconut Pistachio Bars with a hint of rose water and orange blossom water.

These are super easy to make I promise. And they taste just amazing with no added sugar or artificial flavors. Perfect for after eftar snack or even Suhour if you love sweet stuff like I do!

You can coat them in chocolate or leave them as they are and the result will be so tasty both ways!

Coconut Pistachio Bars
Ingredients
- 4 cups shredded coconut
- 1/3 cup raw pistachios
- 1/2 tsp salt
- 1/4 cup rose water
- 1/4 cup orange blossom water
- 2 tbsp honey or maple syrup
- 1 tbsp coconut oil melted
- 150 g chocolate of choice
Instructions
-
Place all ingredients in a food processor. Process until everything is combined and you have a sticky consistency. Add 2 tbsp water if needed to reach this consistency.
-
Press well in a 20*20 cm square pan lined with parchment paper or aluminium foil. Refrigerate for at least 1 hour.
-
When solid, cut into bars.
-
Melt your chocolate in the microwave or using a bain marie. Dip each square in chocolate and decorate with some pistachios!
