Hello everyone! My pumpkin recipes are still coming and today it’s my favorite Pumpkin Pancakes recipe!
Super easy to make and perfect for this weather really! I just love pumpkin and cinnamon in autumn it’s something I’m used to eat every year. That’s why I created this healthier super simple pumpkin pancakes! They are so fluffy and so tasty!
I added some chocolate chips because you can never say no to chocolate right?

Pumpkin Pancakes
Ingredients
- 1 cup all-purpose flour
- 1 tsp cinnamon or pumpkin spice
- 1 1/2 tsp baking powder
- 1/2 tsp vanilla
- 1/4 tsp salt
- 1/2 cup milk of choice
- 1 tbsp honey or sweetener of choice
- 2/3 cup pumpkin puree
- 1 egg
- 2 tbsp chocolate chips optional
Instructions

Whisk everything in a bowl. It's okay if batter has some lumps.

Heat a non stick pan on medium heat. Pour 1/4 cup batter, wait until pancake bubbles then flip. (You can add some chocolate chips before flipping).

Repeat until no batter remains. Serve hot with honey or maple syrup.
