Hello everyone! So few days ago I experimented with this pancake recipe and OMG! It’s my favorite so far! Banana Oatmeal Pancakes that are adapted from my 2 Ingredients Banana Pancakes.
In this pancake recipe, I added some sweetener to give the pancakes some sweetness because my banana was not too ripe. But if you have a very ripe banana (aka brown or black), feel free to leave the sugar/sweetener out because your banana will be sweet already. The oats on the other hand, give a grainy texture but I loved it! If you prefer a smooth pancake then blend the batter in a blender before putting them in the pan.
I served mine with a bit of honey and raisins but you can serve it with maple syrup and any type of fruits you want!
Banana Oatmeal Pancakes
- 1/2 cup quick oats
- 1 medium banana
- 1 egg
- 3 tbsp sugar or dry sweetener of choice
- 1/2 tsp baking powder
- 1/2 tsp vanilla
- Pinch of salt
In a bowl, mash the banana with a fork. Add all other ingredients and mix until everything is incorporated.
Grease a pan with a bit of oil and let it heat for 1 minute. Pour a little less than 1/4 cup of batter and wait until pancake gets fluffy and brown on bottom then flip. Repeat until no batter remains.
Serve with your favorite fruits and some honey or maple syrup!
