Servings: 4 medium pancakes
- 1/2 cup quick oats
- 1 medium banana
- 1 egg
- 3 tbsp sugar or dry sweetener of choice
- 1/2 tsp baking powder
- 1/2 tsp vanilla
- Pinch of salt
- In a bowl, mash the banana with a fork. Add all other ingredients and mix until everything is incorporated.
- Grease a pan with a bit of oil and let it heat for 1 minute. Pour a little less than 1/4 cup of batter and wait until pancake gets fluffy and brown on bottom then flip. Repeat until no batter remains.
- Serve with your favorite fruits and some honey or maple syrup!
