Healthy Flourless Carrot Pancakes

Hey guys! I miss you all and I miss my bakings! But here I am today with a brand new recipe and a challenge for you!

For the challenge, I teamed up with an international team to present you a fun challenge! I’m so excited to see your creations guys! Below are the details:

INT’L FOOD CHALLENGE
Organized by a team of 12 Food bloggers worldwide representing Algeria, Dubai, France, Jordan, Lebanon, New Zealand, Spain and Switzerland.  

Put your create cap and prepare preferred recipe or create a recipe with Carrots and post it on your feed (picture and written recipe) as of now and until April 17 midnight. 

You can use carrots or any veggie from the Carrot family only. The recipe can be Savoury or Sweet.

To validate your participation, you must mention :

·       that you participate to the Food challenge with Carrots organized by the Int’l Food Challenge team

·       add the Hashtag #Hellocarrotlovely

·       mention at least one member of the team

Each team member will select one recipe, test it and post it on April 24. So ready, steady cook as your recipe might be selected.

As for this recipe, this is carrot season so get ready for amazing healthy recipes using carrots! I made some Healthy Flourless Carrot Pancakes that taste amazing! Drizzled them with a bit of caramel because why not.

Healthy Flourless Carrot Pancakes

Servings 6 pancakes

Ingredients

  • 1 cup quick or old fashioned oats
  • 1 tbsp sugar or dry sweetener of choice
  • 1 tsp cinnamon
  • 1 1/2 tsp baking powder
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1 egg white
  • 1 medium ripe banana mashed with a fork
  • 1 medium carrot grated
  • 1/3 cup water
  • Honey or maple syrup to serve

Instructions

  1. In a bowl, mix together the oats, sugar, cinnamon, baking powder, vanilla and salt.

  2. Add the egg white, mashed banana, grated carrot and water. Whisk everything until incorporated.

  3. Heat a nonstick pan (you can grease it with a bit of oil), pour 1/4 to 1/3 cup batter. Wait until it bubbles and brown from the bottom then flip. Let it brown a bit on the other side too. Repeat until no batter remains.

  4. Enjoy warm with your favorite toppings!
