Hey everyone! I’m super excited for this new Blondies recipe! These Fudgy Butterless Blondies are so gooey with a crispy outside that makes you want to eat the whole thing!
To get started, I never came across a butterless version of blondies so I made my own! I used vegetable oil instead of butter and the result is superb! Blondies came out crunchy on the outside, chewy on the inside and everything that your heart desires.
Now to get the perfect fudginess (if that’s even a word), the baking time is really important. Respect the baking time and get to know your oven because every oven is different so what worked for me might not work for you, depending on the type of oven and temperature. So keep an eye on these blondies while baking to prevent overbaking them.
To be honest, these are not the ultimate healthy snack if you want to lose weight, but you can always eat them in moderation because trust me, they are so worth it!

Fudgy Butterless Blondies
Ingredients
- 2 1/2 cups all-purpose flour
- 1/4 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 3/4 cup vegetable oil*
- 1/2 cup granulated white sugar or dry sweetener of choice
- 1/2 cup light brown sugar
- 1 tsp vanilla
- 1/2 cup chopped chocolate or chocolate chips
Instructions

Preheat oven to 180°C and line a 20×20 cm square pan with parchment paper.

In a medium bowl, combine flour, baking soda and salt. Set aside.

In another bowl, whisk together the eggs, vegetable oil, sugar and vanilla until creamy.

Gently stir in the flour mixture until combined, it should resemble to a sticky dough.

Fold in chocolate chips. Spread the mixture in the prepared pan and bake in preheated oven for 20 mins. Do not over-bake.

Remove from oven and let cool before slicing.

*If dough is not coming together, add a bit more oil until it does.
