Healthier Mafroukeh with Healthier Ashta

 

Hello everyone! Today I’m sharing my healthier Mafroukeh and Healthier Ashta! Yes you can enjoy a piece without guilt. You can add some syrup too! Usual Mafroukeh recipes call for butter but since I never eat butter, I replaced it with vegetable oil. The consistancy will differ from the sticky normal Mafroukeh, here it will be more crumbly like a cheesecake base. That’s totally fine because when you apply pressure on it, it will stick together just like any cheesecake base! And the Ashta.. oh my! My favorite part! I’m still amazed by its deliciousness (if that’s even a word)! Well yes it’s not real Ashta but who cares?! It’s sooo delicious!

Healthier Mafroukeh with Healthier Ashta

Ingredients

Syrup

  • 1 cup granulated white sugar or dry sweetener of choice
  • 2 cups water
  • 2 tsp lmon juice
  • 3 tbsp orange blossom water (may zaher)

Ashta

  • 6 slices white toasts
  • 1 cup milk powder
  • 2 cup water
  • 5 tbsp sugar or dry sweetener of choice
  • 2 tbsp cornstarch
  • 1 tbsp orange blossom water (may zaher)

Mafroukeh

  • 3 cups fine Semolina
  • 1/2 cup vegetable oil
  • 1 cup syrup
  • 2 tbsp orange blossom water (may zaher)
  • 2 tbsp rose water (may wared)
  • 1 cup granulated white sugar or dry sweetener of choice
  • 2 cups water

Instructions

Syrup

  1. In a saucepan, combine water and sugar. Place on medium heat until it boils. Add the lemon juice and orange blossom water and stir until just combined. Pour in a jar and let it cool.

Ashta

  1. Cut the toast edges then cut to squares.
  2. In a bowl, add the milk powder, cornstarch, sweetener and water. Stir until no lumps remains.
  3. Place the milk mixture with the toasts in a saucepan on medium heat, keep stirring until thickened. Add the orange blossom water and stir until combined.
  4. Pour in a glass bowl, let cool to room temperature then cover and refrigerate until you want to serve.

Mafroukeh

  1. First, you need to make some caramelized sugar: place 1 cup sugar/sweetener in a saucepan and heat until it turns brown. Add 2 cups water, it will turn all brown. Stir until sugar s dissolved. Turn off heat and set aside.
  2. In a different saucepan, toast the Semolina on high heat until slightly brown.
  3. Lower heat, add the oil and toast again until Semolina absorb the oil and become a bit darker.
  4. Add 1 cup syrup, the caramelized sugar-water, 1 tbsp orange blossom water and 1 tbsp rose water. Mix everything until Semolina absorbs the liquid and becomes brown. Place on your desired plate and let cool.
  5. When the Semolina has cooled, place the Ashta over and decorate with some nuts and syrup as you like!
