Spinach Tortilla Wrap

Tortilla wraps are something I really enjoy. But how about adding more nutrients and fibers to the classic ones? That’s what I did here by adding a spinach puree that not only added more fibers, but also gave a beautiful irresistible green color! These wraps taste as good as they look and they’re so simple to make with no oven needed.
I enjoyed mine with some mustard, mozzarella cheese and vegetables but feel free to have it for breakfast or lunch stuffed with anything you want!

Servings 6 wraps

  • 3 cups fresh spinach
  • 3 tbsp water
  • 1 cup all-purpose flour
  • 1 tbsp olive oil
  • 1/4 tsp salt

  1. In a saucepan over medium heat, place the spinach and 3 tbsp water. Bring them to a small boil while covered.
  2. Blend the boiled spinach in a blender until smooth like a puree.
  3. In a bowl, mix the flour, olive oil, salt and spinach puree with your hands until a dough forms. Add more water if dough is too dry or more flour if too sticky. Note that dough should hold together and not be sticky at all.
  4. Divide dough to 6 equal parts. Roll each one until thin like a tortilla then place in a heated nonstick pan
  5. Heat the tortilla for one minute on each side or until nice brown spots develop. Place in a tortilla warmer or on a plate covered with a tea towel.
