Servings 20 brownies

  • 1 large avocado
  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder unsweetened
  • 1/4 cup coconut oil softened, or vegetable oil
  • 2 large eggs
  • 1/2 cup honey or maple syrup
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/4 cup sugar or dry sweetener of choice
  • 1 tbsp chia seeds optional

  1. Preheat oven to 180°C and line a 20×20 cm square pan with parchment paper. (I only had a rectangular pan but that’s okay).
  2. In a mixing bowl, cut the avocado and mash it with a fork. Add all other ingredients except the baking soda and mix well by hand or using an electric mixer until a smooth batter forms.
  3. Add the baking soda and mix again.
  4. Pour the thick batter into the pan and spread evenly using a spoon.
  5. Bake in preheated oven for 20-25 mins or until done in the center.
  6. Take it out and let cool before cutting.
