I think I went to Sprinkles Heaven today with these cookies! After experimenting and trying to balance the texture I finally have the perfect recipe for you! Easter is coming and these are so colorful and yummy you’d want to eat the whole thing. So easy to make with simple ingredients. Let’s see how it’s done!
Vegan Funfetti Cookies
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3 tbsp sprinkles
- 1 cup sugar or dry sweetener of choice
- 1/2 cup vegetable oil
- 3 tbsp water
- 1 tsp vanilla
- 1 tsp white vinegar
In a bowl, mix together the flour, baking powder, baking soda, salt and sprinkles. Set aside.
In another bowl, whisk together sugar with oil, water, vinegar and vanilla until smooth.
Pour wet ingredients into dry ones and mix until everything is incorporated.
Cover dough with cling wrap and refrigerate for 30 mins, this prevents the cookies from spreading too much.
Preheat oven to 180°C and line a cookie sheet with parchment paper.
Divide mixture to 14-16 equal balls, put them on the baking sheet and flatten them a bit.
Bake for 10 mins, cookies should be slightly brown on bottom. They will look under-cooked but remove from oven and leave them another 10 minutes before removing them from the pan.
