Easter is around the corner so I’ll be sharing few healthy treats recipes that are so easy to make and so yummy! First is the coconut macaroons nests with healthy dates eggs. Very few ingredients to make Easter even sweeter!
Coconut Macaroons Nests and Healthy Easter Eggs
- 3 egg whites
- 1/2 cup sugar or dry sweetener of choice
- 1/2 tsp salt
- 3 cups shredded coconut unsweetened
- 2 cups date paste (or soft pitted dates soaked in hot water for 15 mins)
- 2 tbsp cocoa powder unsweetened
- 1/8 tsp salt
- 375 g white chocolate
- 1 tsp coconut oil
- 2 dots red, yellow and green food coloring
Preheat oven to 180ºC and line a baking sheet with parchment paper.
In a mixing bowl, whisk the egg whites with sugar and salt just to break the eggs.
Add the shredded coconut and mix well until you have a sticky texture.
Take about 1 tbsp of the mixture, place on baking sheet and shape like a nest. Repeat until all mixture is gone. No need to space them much because they won't spread.
Bake in preheated oven for around 20 mins or until golden brown on top.
In a food processor, mix the dates with cocoa powder (and nuts, if any) until a sticky dough forms.
Take about 1 tsp of the dough and shape like an egg. Repeat until all dough is gone. Place in the freezer for 15 mins while you melt the chocolate.
Meanwhile, cut the chocolate to equal little pieces, place in a microwavable bowl with coconut oil and microwave for 1 min. Stir the chocolate then microwave for 15 secs intervals until all chocolate is melted.
Divide melted chocolate to 3 equal parts, add 2 dots of each food coloring to 1 part and mix well.
Dip the dates eggs in chocolate, place on parchment paper and let the chocolate cool. Refrigerate for 1 hour.
Place eggs in the coconut macaroons.
